Fillet of sea bass with saffron

Ingredients

- 4 sea bass 400 g
- 4 cloves of garlic
- 8 dl fish broth
- 1 dl of dry white wine
- 2 sachets of saffron

Clean the sea bass, add salt and pepper, keep in refrigerator, Put the heads and bones in a saucepan with a little olive oil and cook over high heat, stirring vigorously so as to crush the heads and bones, add the wine, allow to boil, add the fish stock, saffron, then reduce, strain and keep aside.
